I miss porridge don’t you? It’s such a belly warming and comforting breakfast in the cooler months.
You can DIY your own grain free porridges from home but that can be a lot of time and effort on a morning when you are trying to get out of the door. That’s why I love this recipe as it’s super quick and simple – so long as you have a bag of our No Nut Hemp Granola in the pantry.
This porridge is made without oats, grains, eggs, nuts, dairy or refined sugars – so caters for pretty much all food intolerances unless you are avoiding seeds that is!
You can also make these like overnight oats – just prep the Granola, coconut milk and water in a bowl in the fridge overnight, then cook in the morning. Soaking the mix will help with digestion and nutrient absorption, as well as save you precious minutes in the morning for important things – like lingering in bed a bit longer!
- 60g No Nut Hemp Granola
- 55g coconut milk
- 55g water
- maple syrup (or sweetener of choice), cinnamon and additional hemp seeds to serve (optional)
- Chop the No Nut Hemp Granola in your food processor until it resembles oat sized bits. Or in your Thermomix chop 4 sec/speed 8
- Place the coconut milk, water & chopped Granola in a heavy based saucepan with 1/2 cup of water and mix to combine. Cook over a medium to low heat, stirring, for 10 minutes until the porridge has thickened. Or add the coconut milk, water and chopped Granola to your Thermomix and cook 7 min/90 degrees/speed 2
- Transfer the cooked porridge to a serving bowl and top with maple syrup, a sprinkle of cinnamon & hemp seeds.
