Jaffa Muffins

Ingredients

  • 1 Low Carb Pancake Mix
  • 1/4 cup/50g butter
  • 1/4 cup-1/2 cup/50g sugar (I use coconut sugar)
  • 3 large eggs
  • 1 tsp vanilla
  • 1/4 cup water
  • juice and zest of 1-2 oranges

Method

  • Cream butter and sugar (I use less sugar than recipe as I find the juice is sweet enough for me)
  • Add eggs, vanilla, water and mix again
  • Add pancake mix, orange juice and zest and mix till combined
  • pour into baking paper patty pans and cook 180c for 30-40 mins till lightly golden. I find placing muffins bottom of the oven helps them rise evenly.

Chocolate Buttercream Icing

  • 120g butter cut small
  • 120g honey
  • 20-30g cacao powder
  • 1/2 tsp vanilla

Method

  • Whisk all together in electric mixer or thermi with whisk attachment till creamy and light

Decorate with dehydrated oranges or whatever you choose!
