And so for this Valentine’s Day I’m giving you this super duper simple Low Carb Savoury Muffin Recipe 💕💕
These Muffins make a perfect, healthy & delicious light meal, snack or picnic. 🥕
I used carrot & zucchini here but just chuck in whatever you have that needs using up. I bet leftover roast veggies, olives, bacon & spinach would all work so well.
This is a good way to use up a #primalalternative Low Carb Pancake Mix. We usually have a batter made up in the fridge for east breakfasts so just use that. 🥞
Low Carb Savoury Muffins🌿
❤️1 x Primal Alternative Low Carb Pancake Mix made as per packet directions
❤️100g grated cheese (reserve some to sprinkle on top)
❤️200g chopped/grated veg like zucchini and carrot
❤️Preheat oven to 180 & line muffin tins with baking paper/cups
❤️Combine all ingredients in a bowl
❤️Fill muffin mould 3/4 full
❤️Bake for about 20 mins or until golden
I enjoy these hot from the oven, sliced in half and liberally spread with butter!
Store in the fridge for a week or frozen for 3 months.
Warm them up by slicing in half & toasting!
