Meatloaf Encased In Sweet Potato Pastry

  • 200g Bacon
  • 1 Onion
  • 1 Tspn Garlic
  • 500g Beef & Pork Mince
  • 500g Pork Mince
  • 2 Eggs
  • 1 Tspn Thyme
  • 1 Tspn Sage
  • 1 Tspn Salt
  • ½ Tspn Pepper
  • 2 Tspn Garlic Powder
  • ½ Cup Chopped Parsley
  • 1/3 Cup Apple Chutney
  • 4 Boiled Eggs
  • 500g Sweet Potato Pastry

Method

  1. Saute’ onion, bacon & garlic, add all other ingredients together except boiled eggs & pastry.
  2. Roll pastry out to 2-3mm thick 40cm x 30cm between baking paper.
  3. Place half meatloaf mixture on long edge.
  4. Line boiled eggs on top.
  5. Top with remaining meatloaf  mix.
  6. Use baking paper to roll up & seal ends.
  7. Glaze with egg wash.
  8. Bake at 200C for 30 minutes, turn oven down to 180C & bake another 30 minutes.
