Lunch-box friendly, low carb, paleo, vegan bars of yum!

Muesli Bars

Conventional Muesli Bars are so convenient but, let’s face it, they don’t offer much nutrition at all.  Most Muesli Bars are full of gluten, wheat, dairy and sugar.  A lot of paleo/primal treats are packed with nuts, which is problematic when you’re trying to find something quick and nourishing to pop in lunch boxes.

I love this Granola as you only need 3 ingredients, so it’s totally faff-free so you’ll always feel like whipping one up!  I can see this being a staple in our fridge – what about you?

I made mine with honey and the taste reminded me of Flapjack that my Mam makes.  The original Flapjack recipe is made with so much sugar and oats so we don’t make it anymore…but now we have this primal alternative woohoo!

Lunchboxes are close to my heart!  You can do a lot of great work with solid ‘book end’ meals like Breakfast and Dinner but I do despair at the content of lunchboxes – even my own kids.  I am hoping this bar – packed full of fat and protein will be a healthy new addition.

Muesli Bars

Ingredients

4 cups of Primal Alternative No Nut Hemp Granola

1/2 cup coconut oil

1/4 cup honey or maple syrup or sweetener of your choice

Optional – melted dark chocolate to drizzle over

 

Method

  1. Line a tray with baking paper (mine was 17cm x 27cm).
  2. Gently melt the coconut oil and sweetener together.
  3. Add No Nut Hemp Granola and stir well to combine.
  4. Spread mix into lined tray and pop in the fridge to set for at least 4 hours (or freeze if you are in a hurry like me!)
  5. Drizzle with melted chocolate if desired, slice and devour!
