Primalista Shelley’s Pumpkin Soup Recipe

Ingredients

2 tbsp ghee
1 large onion chopped
2 cloves garlic crushed
2kg pumpkin – peeled, chopped
1.5L (6 cups) chicken bone broth
1/2 cup coconut cream
Salt and pepper to taste
4 bacon rashes (cooked) chopped
Chives to garnish

Method

Melt ghee in large saucepan, add onion & garlic, cook stirring until onion is soft, add pumpkin & bone broth, bring to boil, reduce to simmer uncovered for about 20 mind stirring occasionally until soft.

Purée soup in batches in thermie until smooth, return back to saucepan and season with salt and pepper, add coconut cream if desired (I tend to add a little of this at time of eating.)
Serve garnish with the cream , bacon and chives.
