Easy Chicken Korma with Grain-Free Naan

Back in 1998, when I was just starting to find my way around the kitchen, my Mam gifted me Meals in Minutes by UK chef Ainsley Harriott as an Easter present. It was the perfect book for a beginner like me, full of simple, delicious recipes that made me feel like I could actually cook! One recipe that has stuck with me over the years is this gorgeous Chicken Korma.

It’s one of those beautifully easy dishes that makes you feel like a pro without any of the stress. You just whizz up the sauce in the food processor, pour it over the chicken, and pop it in the oven. Then, while it bakes away, you can relax with a glass of Prosecco (and hop in the spa like I do) as the incredible aromas fill your home.

I’ve found the perfect way to serve it too. I roll out Primal Alternative Quirky Cooking Pastry and pan-fry it in ghee to create a wonderfully chewy, grain-free naan bread. It’s an absolute game-changer, and my family goes wild for it. Paired with a fresh salad of finely chopped cucumber, red onion, tomatoes, and coriander, it’s the kind of meal that’s both nourishing and comforting.

Since I’m usually making this in the evening under our cozy, orange-hued blue-blocker lights, getting a perfect food photo can be tricky. So here’s a little snap of our homemade naan instead — trust me, it’s as delicious as it looks!

Chicken Korma Recipe

Prep Time: 10 minutes
Cook Time: 30 minutes

Ingredients:

  • 1 tbsp ghee or coconut oil

  • 1 onion, roughly chopped

  • 175 ml natural yogurt

  • 100 ml double cream

  • 3 tbsp ground almonds

  • 4 x 100 g boneless, skinless chicken thighs (cut into bite-size pieces)

  • 25 g butter

  • 1 tsp salt

  • 1 tsp ground turmeric

  • 2 tsp hot chilli powder

  • 3 garlic cloves, crushed

  • Toasted flaked almonds and coriander sprigs for garnish (optional)

  • Naan bread or rice, and cucumber & red onion salad to serve

Instructions:

  1. Preheat your oven to 200°C / 400°F 

  2. Heat the ghee or coconut oil in a small pan and sauté the onion for about 5 minutes, until softened.

  3. Transfer the onion to a food processor. Add the yogurt, cream, butter, salt, turmeric, chilli powder, garlic, and ground almonds. Blitz until smooth.

  4. Arrange the chicken pieces in a greased casserole dish and pour the sauce over the top.

  5. Bake for 30 minutes or until the chicken is cooked through.

  6. Garnish with flaked almonds and fresh coriander if you like, and serve with naan or rice and a fresh salad.
