The dynamic deliciousness diva, Helen Marshall, creator of Primal Alternative and the growing team of Primalistas, has asked me if I would share my Paleo German Rye Bread recipe with you, her beloved tribe. And it is with great pleasure that I bring you another way to nourish your heart and soul at the same time as deeply nourishing your body.
For me, German rye bread evokes warm memories of my childhood. Sitting at the family table on a rainy Sunday lunchtime, slathering German mustard on my favourite hot wiesswurst sausages and slices of dense and satisfying rye bread. Not the fluffy, pumpernickel rye, but the dense, firm and deliciously mysterious traditional rye bread. The kind that comes in bricks you could build a fairytale house out of.
But on my journey to this point in my life I have discovered, like so many others, that eating grains that contain gluten doesn’t serve my body. And on an even deeper level, eating them doesn’t serve my soul either. So, alas! It has been many years since I last ate the German rye bread of my childhood. Until now.
I am a huge fan of Helen’s mission, which is so in alignment with my own. As a Medical Intuitive, I work with clients to uncover their physical and energetic health issues, and reveal the deeper meaning behind their health and life crises. I am all about honouring the body’s natural way of functioning, and giving it what it is really asking for to return it to a state of balance.
I see the bigger picture of our physical signs and symptoms: that they are messengers of a deeper issue. Signals, that once uncovered, can change our lives for the better.

By eating a diet rich in nutrient-dense nuts, seeds, vegetables, fruit, healthy fats and clean protein, our bodies are given all that they need to thrive and stay radiant. And if we leave out grains, dairy, sugar, processed foods, additives, chemicals and junk from our diet, we allow our liver and kidneys to detoxify and support our bodies’ natural cleansing processes.
This helps to support the body to activate its natural healing mechanisms. To eliminate disease and help the body to return to a state of balance. A state of harmony.
This bread recipe will do all that for you, and more!
Packed full of nuts and seeds, this bread is rich in healthy fats and protein to keep you feeling satisfied for longer. It is also very high in calcium, plant-based iron, magnesium, potassium, omega 3, and vitamin B6. And to pack an extra power-punch to your daily self-care routine, this Paleo German Rye (no rye!) Bread is also laden with soluble and insoluble fibre to support your body’s natural detoxification processes.
In addition to the physiological benefits, eating such high vibrational food that is as nutrient dense as this loaf will also support your energetic, mental and emotional health. This Paleo German Rye Bread is not only Paleo, vegan and coeliac friendly, but free from grains, gluten, eggs, dairy, yeast and refined sugar.

For those who haven’t made a Paleo bread before, this is not a fluffy, risen bread. It is a dense, delicious and deeply satisfying bread that is best served toasted.
Amazing with German sausages and mustard (yay!), it is also a delicious accompaniment to soups, as baked croutons on salads, or toasted and slathered with your favourite jam or nut butter for breakfast. Toasted and topped with avocado and tomato or smoked salmon and rocket, it makes a fantastic base for open sandwiches. And I’ve even sliced it thinly and used as I would use regular bread in my sandwich toaster, so I can join in with the school holiday lunchtime feeding frenzy in my house.
I’m so pleased that I now have a way to bring the satisfying scents and flavours of my childhood comfort foods to my healthy, gluten-free kitchen table. My hope is that you, too, can enjoy eating this bread, safe in the knowledge that you are not compromising your lifestyle principles or your body’s needs.

Paleo German Rye Bread
Ingredients:
- 85g flax seeds (linseeds)
- 30g chia seeds
- 110g raw almonds
- 120g sunflower seeds
- 1 tsp caraway seeds
- 80g pumpkin seeds
- 85g quinoa flakes (or almond meal, if wanting an even lower glycemic load than quinoa)
- 20g sesame seeds
- 30g coconut flour
- 20g psyllium husk powder
- 1 tsp Himalayan pink salt
- ground black pepper, to taste
- pinch dried tarragon
- 60g coconut oil, melted
- 30g maple syrup (or honey, if not vegan)
- 400mL filtered water (plus a little extra, if required)
Method:
- Grind flax and chia seeds in Thermomix speed 10 for 1 minute (or other high speed processor at top speed for 1-3 minutes, depending on machine.)
- Add almonds, sunflower seeds and caraway seeds to the Thermomix bowl, and grind speed 10 for one minute.
- Pour mixture into a large bowl.
- Add pumpkin seeds, quinoa flakes, sesame seeds, coconut flour, psyllium husks, pepper, salt and tarragon. Stir to combine.
- In a smaller bowl or jug, mix melted coconut oil, maple syrup (or honey) and water.
- Add liquids to dry ingredients. Stir well with a strong spatula until a very firm dough is formed.
- Add a little extra water only if you need a bit more after it’s been well mixed. The exact amount of water required will depend on how finely ground the other ingredients are, as well as the quality of the coconut flour, which is very absorbent.
- Press into a small silicon-lined metal loaf pan (or baking paper lined metal loaf pan) and smooth the top with the spatula. For best results, the loaf pan I use to make this bread is silicon lined and made from heavy metal, and is 10cm x 18cm x 10cm deep.
- Allow to rest at room temperature for at least 2 hours for the ground seeds, nuts and coconut to absorb all the liquid. It will not rise at all, as there are no raising agents in this type of bread. Don’t stress! This is normal. Go have a cuppa and meditate in the sunshine.
- Preheat oven to 180C. (or 160C, if your oven is hotter than others)

Bake in the oven for 60 minutes, then gently remove the loaf from the pan using oven mitts and place the loaf back in the oven upside down without the tin, directly on the oven rack, for another 60 minutes. Total baking time is 2 hours.

Remove the loaf from the oven and cool completely on a wire rack, before slicing.
This loaf can be sliced and frozen in a plastic freezer bag (or equivalent), so you can enjoy a slice of it — toasted — any day you like.
All measurements are in Australian Standard measures. 1 cup = 250ml, 1 tablespoon = 20ml, 1 teaspoon = 5ml.
